Aging: Fermented open top, racked once, aged in neutral oak barrels for 21 mo. Unfined, unfiltered. Limited SO2 used at bottling.
Organically and sustainably farmed
This wine is a co-fermentation project in that I co-fermented the Mourvedre with the Syrah and fermented the Mourvedre separately, then aged those apporaches to fermentation in separate barrel groups and tasted them to see what turned out the best. The blend of these two is a surprising and elegant combination. When I tried to add Syrah to this wine that had been fermented on it’s own, it was a bully, it overtook the elegance in the wine. But co-fermented with Mouvedre added a beautiful polish and a silky texture. This wine has some earthy notes, some sweet nutty notes, like the subtle sweetness from a walnut and rich flesy plum overtones. It’s one of my favorite wines I’ve made from Shake Ridge Ranch.
